Baked Potato Soup
3 Tbsp butter 1 cup finely chopped onion 2 Tbsp flour 1 can chicken broth 1 lbs baking potato cut into 1/2" cubes 1/2 tsp salt 1/4 tsp white pepper 1/4 tsp black pepper 1 tsp dried basil dash tabasco sauce 1/2 tsp garlic salt 1 cup half & half cubed ham (optional) Garnish: cheddar cheese crumbled bacon sour cream chopped green onions |
Melt butter in a 2 quart saucepan on medium heat. Add onion and sauté for 2 minutes. Sprinkle flour over the onions and cook about 5 minutes, stirring often. Gradually add chicken broth. Add potatoes, salt, white and black pepper, basil, tabasco, and garlic salt. Bring to a boil, reduce heat to low, and simmer for 20 minutes. Stir occasionally. Stir in half and half. Heat through. Serve garnished with cheddar cheese, crumbled bacon, sour cream, and chopped green onions. Serves 5 but doubles easily.
