Hawaiian Haystacks
According to my Hawaiian friend, this is not a Hawaiian recipe. It just happens to have pineapple and coconut. There is no right or wrong way to create your "haystack" meal. I start with rice, then the chicken mixture, cheese, chow mein noodles, pineapple, sliced black olives, tomatoes, and coconut, and then possibly more cheese. Just add things in the order and amount that you like. Chicken mixture 3-4 chicken breasts water 1 chicken bouillon cube 1 onion, chopped 1 1/2 cups chopped carrots 3 celery stalks, diced 1-2 cans evaporated milk 1-2 cups flour salt pepper Put the chicken breasts in a large pot with just enough water to cover them. Add a descent amount of salt and the chicken bouillon cube. Simmer until the chicken is cooked. While the chicken is cooking, chop the onions and carrots (I use a Pampered Chef food chopper) and dice the celery. Add the vegetables as they are chopped and diced. Once the chicken is cooked, chop it and put it back into the pot. In a small mixing bowl, whisk together 1 can of evaporated milk with 1 cup of flour. Slowly add to the chicken mixture, stirring constantly. Add enough to have the consistency of a thick gravy. You will likely have to make more of the flour/evaporated milk mixture to make it thick enough. |
